中西方饮食文化对比

一、简述

中国人说:一方水土养一方人。欧洲的山和城堡,怎么看都象一幅油画,厚重、精确、气势磅礴。中国江南的水和亭阁,怎么看都象一幅水墨画,飘洒,似梦似幻。什么是"文化卜书上的定义说文化是一切物质和精神产品的总和。我说文化就是你看到的一切,一草一木、一言一行。"民以食为天",饮食文化贴近我们的生活,领略饮食文化申的内涵,其实亦是在读懂生活这本书的第一页。

二、有关中西方饮食文化的研究

中华饮食文化的特点:

中华饮食文化的渊源,是东方古老的阴阳学说,这是一种带有浓厚浪漫色彩的哲学,至今仍在影响我们的饮食生活,中国人的饮食追求是"美味享受,饮食养生",把饮食的味觉感受摆在首要位置上,注意饮食审美的艺术享受。中国的传统饮食观,不存在营养的壤念,只讲究养生。饮食养生包括"辨证施食"与"饮食有节"两方面。原理还是阴阳五行的相生相克,中国人把饮食作为一种艺术,以浪漫主义的态度,追求饮食的精神享受。

西方饮食的文化特点:西方近代科学文明,对西方饮食习俗的形成影响极大,西方发达的科学,分析食物的成份含量,掌握具体的营养要求,不过是小菜一碟。西方人对待饮食,首先讲有什么营养,能产生多少能量,味道则是次要的。如果加热烹调,会造成营养损失,那就半生不熟甚至千脆生吃。西方人把饮食当作一门科学,以现实主义的态度注重饮食功能。

营养是人类生存的基本条件,更是反映一个国家经济水平和人民生活质量的主要指标。西方人以主食为主,把谷类地位放在所有食品之上,既保证谷物和其他食物能够发生营养的互补,也保证饭和菜的比例适合。中国菜口味稍咸,但是经过淡而无味的主食的稀释,情况得到很大的改观。

历代餐具看中国饮食文化饮食文化是中国值得自豪,也是最容易为世界各国所接受的一环。美味的食物享用得多,有没有考究过中国人何时开始脱离茹毛饮血的生活?何时开始用炉灶煮食?常吃的水饺、云吞何时出现?又怎样由分餐制度演化为围桌而食?……在正在香港举办的“美食配美器——中国历代饮食器具展”中,不仅得到答案,更可深入浅出地认识中国饮食喜好与器具的转变关系。

据香港大公报消息,展览由中国国家博物馆提供100多件珍贵文物,该馆展览部副研究员胡晓建介绍说,该馆专门为这个专题展览而筹备、组织,展品大都是首次来港展出,其中10多件是国家一级文物,如新石器时代《灰陶釜、灶》、隋《金足金杯》、北魏《青瓷莲花尊》及汉代《铺首衔环铜?[》等。

现场展出的《灰陶釜、灶》,是已知发现较早、且完整的炊具,胡晓建说,新石器时代的《附加堆纹灰陶鼎》是三足锅,《黑陶甑》是最早期的蒸屉,下半部盛水,称鬲,中间有孔隔,上面放食物。在旧石器时期,人类以烧烤为主,到了新石器时期,则开始用水煮、气蒸的手法,北方吃粟,南方吃稻。现场一件新石器时代《双耳小口尖底瓶》,两边的耳孔吊着绳子,放进河里入了水,陶瓶便会立起来,可见当时的先人打水也很有智慧。

到了夏、商、周及春秋、战国时期,讲究饮食礼仪,闻名遐迩的青铜器工艺达到全盛期,由甑与鬲结合而成的?[,已发展至青铜器制。在春秋后期,已有饺子出现,而当时祖先开始懂得吃面食、云吞及粉食了。由于这段时期注重礼祭,出现了许多酒器,如现场展出的《戍马铜觚》是饮酒器,铜?F用以盛酒,而《窃曲纹龙首三足铜?B》是当时的调酒器,最特别的是《铜冰鉴》,冰酒器具,内置方形罐,用以盛酒。现场也展出了同时期常用的漆器餐具仿制品。

汉代的展品较特别的有《铺首衔环铜?[》,是当时的铜烤炉,另外汉代陪葬品《陶灶》,反映出当时人们已有完整的炉灶设备,这座船型的陶灶是南方流行的款式,而北方只用简单的长方型炉灶。

隋唐是中国文化与国势强盛时期,各民族在饮食文化上进一步交流融合,菜肴品种大增,建立不同饮食流派,当时已普及高足桌、椅,加上宴会菜式丰富,因此由分餐制的一人一套餐具形式演变为多人围桌合食的形式。当时着重华丽的生活,金银及玻璃器皿相继出现,并且造工精巧。现场展出的隋唐食器有入口自东罗马的《金足金杯》。另外在新疆出土的唐代《饺子、点心》,胡晓建说,点心是一些饼食,用面以花模印成漂亮的形状及花样,而饺子内则有肉,反映新疆地区也受中原饮食影响。

至于其它朝代的展品,较特别的有东汉《宴饮杂技画像砖》、北魏《青瓷莲花尊》、辽《莲瓣形柄金杯》、南宋《影青瓷注及温碗》及清道光《粉彩锦荔枝盖碗》等。

When most people think of English food, the word they use to describe it is generally not flattering. Most people would be surprised to know, however, the English food is changing for the better. And the cuisine is more than just fish and chips. Many other cultures and cuisines are influencing British cuisine for the better, and even classic English dishes like Shepherdu2019s Pie and Bubble and Squeak are getting makeovers.

The most popular dish in England today is Chicken Tikka Masala. And while that sounds like an authentic Indian dish, it was actually invented in England using Indian food as inspiration. In fact, this dish is now considered to be more quintessentially Indian than Tandoori Chicken, and its popularity has far surpassed Englandu2019s borders. On a trip to London last summer, I noticed that the menu at Garfunkelu2019s offered not only this dish, but fish and chips as well as pasta and American hamburgers.

Of course, England, like everyone else in the world, has experienced the American fast food invasion. But fast food or “take-away” can also be Chinese, Indian, pizza, and Turkish. Additionally, you can also get fast food at a “chippy” (fish and chips shop) and pick up such portable English foods as pasties and pies (of the steak and kidney variety). Some take-away places can have a variety of cuisines in one place. In Bath, for example, I noticed a fish and chip shop that also had Chinese take-away.

人物简介 林立三(Lam Lap-sam),加拿大温尼泊大学戏剧学院获学士及硕士,又曾在该校任教,参与缅尼托巴省及安大略省的职业剧团演出及导演工作及为温尼伯默剧团之演员。 香港舞台剧演员,亦为一位全面的华裔专业舞台导演,以擅长处理经典剧目及大型音乐剧见称,乃香港首位到西方研习形体表演美学的舞台艺术学者,兼备超过二十年的表演教学资历,学术及教育经验丰富。现任教于香港浸会大学(Hong Kong Baptist University, HKBU)电影学院及文学院(兼任) , 并为香港大学专业进修学院(HKU School of Professional and Continuing Education, HKUSPACE)担任戏剧研究文凭课程统筹及讲师,并兼香港艺术发展局戏剧艺术顾问、香港劳工处雇员再培训局之电影电视娱乐及舞台和香港提升计画之电影电视及舞台任艺术顾问及委员 人物经历 "抽刀断水水更流,举杯销愁愁更愁"这两句诗大家可会耳熟能详?通常都是心情低落,尤其是失恋时,借酒消愁,才会想起来,然而,这首诗对于立足演艺界多年的林立三来说,这首诗却是他踏上戏剧之路的第一份戏本。 林立三 1981年返回香港演出歌舞剧《狄士尼穿梭大汇演》后留港发展。在港曾演出舞台剧包括《吾妻正斗》、《风雨守衣箱(The Dresser)》、《周门家事》等,并凭《推销员之死(Death of a Sale *** an)》及《疯狂夜宴搞偷情(Dont Dress for Dinner)》获得香港舞台剧奖之最佳男配角奖,另外更参与多出电影(如《92黑玫瑰对黑玫瑰》、《一千灵异夜- 血咒》)及电视剧(如《开心女鬼》、《黑钱年代》)。曾执导之舞台剧剧目包括:莎士比亚(William Shakespeare)的《暴风雨(The Tempest)》及《第十二夜(Twelve "读BA都是爸爸叫读,小时我的志愿是做警察,做律师,但后来都没有,因为好仔唔当差,做律师又好似为有钱人打官司,好像不太好。"而当时的工商管理学系,在第一年必须修读一科有关艺术的科目,"于是我问以前中学时一位英文老师,应该选那一科,她同我讲为何不选修戏剧,她叫我可以试下,于是就选读了戏剧这科。" 当年只有他一个中国人修读戏剧,他说还记得那时上堂的情景…… "第一次该系的院长,叫所有学生各自准备一个个人表演,那时我刚入读这科,根本甚么都不知,都唔知点做好,他叫我用自己最了解的文化,语言去表演,于是我用了李白一首诗去完成这次的表演,他给我很大的空间,让我从过程中发掘自己。" 生活照片 他所讲的那首诗,就是 李白《登宣州谢朓楼饯别校书叔云》 : 弃我去者,昨日之日不可留。 乱我心者,今日之日多烦忧。 长风万里送秋雁,对此可以酣高楼。 蓬莱文章建安骨,中间小谢又清发。 俱怀逸兴壮思飞,欲上青天揽明月。 抽刀断水水更流,举杯销愁愁更愁。 人生在世不称意,明朝散发弄扁舟。 他说,因为读书的时候,最有印象的,就是这首诗,于是二话不说,就将这首诗用戏剧的手法演绎出来,当年在外国读戏剧的过程很辛苦,在这位院长的教导外,他不单在过程中发掘到自己,而且让他有很大的思想,创作空间。 读完第一年戏剧后,林立三决定放弃主修工商管理,完全转去修读戏剧,因为他发觉,自己原来是喜欢戏剧,"多谢当时的院长,俾机会我,他让我找到自己,他亦接受我是一个怎样的人,让我可以做回自己。"可是,他的这个决定,却令他差不多断六亲,那时当林立三说要读戏剧时,家人蒐集了大量的资料,解释给他知,差不多七到八成读这科的人,都是没有固定职业,只是赚钱,这是一份没有前途的工作。"家人全都反对,因为家人都是专业人士,我有六兄弟姐妹,我是最细,全家人都不支持我读戏剧,当年读这科,近乎是断六亲。"他形容那六年读书的光景是很辛苦,因为得不到家人的支持,所有生活费,学费开支,都要靠自己赚回来,为了要赚学费,他做过侍应,售货员,卖汉堡包,厨房,洗芽菜,近乎只要你数得出的劳动力工作,他都尝过。"那时洗芽菜是零晨三点开始做,到早上七点返学,然后排戏又半夜开始,有时会在排戏室睡一会,又去返工。" 当年在家人眼中,一科没有前途的学系,一份没有前景的工作,时间一晃,已是三十年,今日的林立三,无论在剧坛,电视电影,学术界,都有着他的名字。 一个偶然 林立三在加拿大,温尼泊大学戏剧学院获得学士及硕士资格,又曾在该校任教。1981年返回香港演出歌舞剧《狄士尼穿梭大汇演》后留港发展。 "后来钟景辉在香港话剧团筹备新剧,有一个角色,叫我担任,当时回港没有想过在香港发展,于是就是这样留在香港,所有事情像是一种缘份,凑巧。"然而,后来他踏足电视电影界,他亦都觉得是一个偶然,"因为自小离开香港,所以对香港的电视,电影,不太熟悉,入电视电影,只是想学习多一点,而多于要做一个明星,因为我想认识当中的运作模式。" 后来钟景辉跟他说,本港将会成立一所演艺学院,想找他帮忙 *** 教书,于是 *** 任教的生活由此展开,"那时,我已是无线的艺员,每日在演艺讲完课后,TVB的车就在外面等我,接我去拍戏。" 当时他在演艺任教的课程,包括声线,人体动作等跟舞台表演有关的东西,开始教学时,林立三只得27岁,是全校最年轻的老师。 "当时的心情很兴奋,那时学生不大清楚戏剧的层面,在当时的香港,是一个新的课程,学生开初都不太明白。" 林立三说,第一年有千多人申请,但最后只能收四十个学生,但他很惊奇,香港学生对戏剧认识不多,却想不到有这么大的渴求。"当时我很兴奋,我所接触的学生是对戏剧充满渴求,有些学生的年纪比自己还要大,心情有点战战兢兢。""我同他们讲,当你慢慢做一个表演者,你就会慢慢开放你个人的感觉,表演不是今天的体会,而是慢慢一天一天去钻研到,去探索到,你自然会走到去某一个形体的方式表达出来。" 教学时间 林立三自香港演艺学院戏剧学院成立以来,便开始任教,至今二十三年。总结二十多年来的教学,他说,学生的质素由第一届到今天总会不停改变,因为社会不断的演变,学生的体验,经历,文化,当然会有不同,这一切都影响着学生质素的问题,他说,不是从一个学生水平去评论,而是从培训机制去。 相关作品 从事戏剧界多年的他,承认到今时今日,读戏剧,毕业即是失业,全世界有七到八成都是自由人,很少是全职演员。 "要做一个演员,你要有爱戏剧的心,即使面临许多困难,即使是卖汉堡包,只要你有这个心,你就系演员,开初不是做演员,不重要,你往后总有机会慢慢返回戏剧界。" 林立三说,不会叫自己做艺术家,他觉得自己只是一个工作者,推动戏剧文化,在他来说,艺术文化是要去推动,在外国有很好的艺术文化推动。"创意是要从小培养,不在于剧场,须先由思维开始,现在的香港是,在剧坛上互相争取观众,其实观众可以自己决定那些好,那些唔好,而不是某人去决定。" 林立三是首位将哑剧带入香港的人,然而有人认为,他在推动哑剧方面的力度不足,但他回响说,在外国不同类型的剧种都有一个专门学校,可是在香港,只有一间演艺学院,在这个架构上,只有以正剧为先,他在教演艺时,亦花了许多时间教他们形体动作。"我指导他们,然后由他们再推动,找出自己想走的路,而不是我一个人在学校去推动,因为我教他们形体表达,他们自己可以决定,可以用哑剧成为他们的演艺,我是播种,在播种过程中,他们自己选择自己的路。" 健康警号 2004年,林立三的健康开始响起警号,2004年到2006年先后入院,当时在家,忽然呕吐厉害,一个钟呕七次。"那时已经呕到无野可呕,是自己打电话叫救护车入院,入了深切治疗部,吊药,吊盐水,后来才知患上胃膜炎。""当身体稍好过来,可以喝第一口水时,那一口水真的感觉如甘露一样,很好饮,很清甜,这次经历对我有很大的意义。"身体的警报响了,所以他决定回加拿大休养,因为他说,自己的神经系统已经到了很敏感的状态,经常会呕会抽筋,所以决定要完全康复过来。当被问到康复后有何打算时,他说没有计画,亦完全没有任何打算,"因为如果一早有计画,只会令自己不能完全放松,背着压力。我认为每做一件事,都是有一个时间性的,现在是全神贯注休息,养好身体。"健康是无价宝,人亦是血肉之躯,再如何强壮的人,都需要注意健康,但现代人许多却忽略了这一点。 感慨 人生如戏 林立三说,他的信念就是继续向前走,好好的走,在走的当中找寻自己,每做一出戏,就会让自己对自己有更好的认识。"是否缘份走过这条路,我唔知,不过二十多年来,做着我认为应该做的事,我只是行紧这条路,就好好的行,我不会想做些甚么伟大的事,表演艺术已经成为自己的人生,人生与工作没有分开过,是身体,生活的一部份。"他希望演艺圈可以互相扶持,希望文化可以从基层做起,各戏团,演艺团体互相平衡,互相多点沟通,而不是互相竞争。"人生如戏,戏如人生,我反而觉得人生难与戏相比。戏是真实,是用真心去演,是 *** 裸的,将自己展现出来;人生却需要平衡,难以 *** 展现。"活在真实的人生中,往往不能随心所欲,经常需要在平衡木上走,找出平衡点,这一点看似容易,却是困难。 无言感激 数年前,林立三获得戏剧界一项杰出专业精神奖,那次他因为健康问题没有出席领奖,然而他写了一封信,信中他特别答谢三人,其中一位是他的妈妈……"我想多谢三位很重要的人,她们在我的戏剧生命内都占有很重要的位置,第一位是我的妈妈,因为当我就读国小和中学的时候,我已经在台上表演,而每次表演的戏服,都是我妈妈亲自替我缝制的,甚至连化妆和发型,都是她一手包办。当时我就读的是一所男校,无论我饰演的男角,或是女角,她都是永远支持和鼓励,还很辛劳地为我筹备一切。"
