寻根溯源:外国技术两次传入 北京烤鸭探源

美国的烤火鸡和北京烤鸭,都源自欧洲或地中海地区的的烤鹅。我们先说美国的烤火鸡。火鸡是美洲特产,在欧洲人到美洲之前,已被印地安人驯化。火鸡的名字在英文中叫「土耳其」。因为欧洲人觉得它的样子像土耳其的服装:身黑头红。欧洲人移民到美洲之后,还没有养好鹅,就有了吃鹅的要求。于是就吃火鸡。并发现火鸡比鹅好吃。而且北美洲有很多火鸡。所以烤火鸡成了美国人的大菜。而且是美国的感恩节的大菜。为什么感恩节要吃烤火鸡?这就是个更久远的故事。感恩节虽然是美国特有的法定节日,其他的国家似乎没有。实际上在西方古代民间有这种节日。内容是在丰收之后,感谢神的关照。中国的中秋节或端午节实际上也有这种内容。这两个中国的节日,一个在秋收之后,一个在夏收之后。这时候人们渡过了没粮食吃的时代,有了新粮食吃,一定很高兴,所以要庆祝并感谢神。有人会说:中秋不是来自和元朝统治者的斗争吗?端午节不是纪念屈原?这是后来才有的意义。在特别古老的时代,它们只是庆祝丰收的节日。在这个节日里,一定要感谢神的关照。因为没有神的关照,就有天灾人祸,庄稼也长不好。而中国的神就是龙、祖先和天地了。所以端午节的赛龙船和往水里丢粽子,可能对龙的感谢。而中秋的月饼,可能是祭神或祖先的食物。这是中国的风俗。而西方在丰收之后,也要感谢神的关照,因此在西方很古的时候就有感恩节。

西方的感恩节吃烤禽类,不一定是烤鹅。为什么吃烤禽类?我们就要看圣经了。圣经旧约出埃及纪中,有这么一段:摩西带着以色列人走到西奈沙漠中,没吃的也没喝的。以色列人大为不满。开始抱怨。摩西就说,上帝听见了他们的抱怨。会给他们吃的。结果第二天就有大批的鹌鹑飞来,落在他们的营地上。摩西说,这就是上帝给你们吃的肉。于是他们欢快地大吃了一顿。这可能是犹太教最早的一次感恩节。以色列人用什么烹调方式吃掉了这些鹌鹑,圣经没有记载。但是我们一想就知道:一定是烤着吃的。因为他们当时正在沙漠,很缺水,不可能煮。也不可能蒸。而且他们也不会蒸。而且只有烤不需要任何炊具。他们从埃及逃出来,一定没有带笨重昂贵的铜锅。那时候根本就没有铝和铁。平常人用不起铜器,在中国那时候铜锅就是鼎,那是不得了的东西。逃跑的以色列人一定不会带着这种东西。一般人用的陶罐很容易打碎,也不能带着上路,所以他们一定是把鹌鹑烤了。这也是最好吃的一种作法。于是西方文化中有了这么一个内容:禽类是上帝给人的救援和礼物。人们应该把它烤了吃。而且是在感恩节吃它们最为合适。鹌鹑比鹅小得多。而鹅也是禽类。人们总是找肥大肉多的吃。特别要说的是鹅地中海地区的特产,正如火鸡是美洲的特产。所以后来人们在感恩节吃烤鹅而非烤鹌鹑。实际上在许多节日,都吃烤鹅。因为西方节日多和上帝有关。欧洲人到了美洲,发现上帝给他们的礼物禽类是火鸡。所以他们就吃烤火鸡来感谢上帝。知道了烤火鸡的故事,就比较容易接受烤鸭的故事了。烤鸭的祖先也是西方的烤鹅。

烤鹅技术被两次传入中国。一次是在元朝。一次是在清朝。元朝的时候,蒙古帝国占领了很大的地盘。从中国的东部,到地中海地区,都是他的地盘。所以西方人如马可波罗可以到中国来。他们带来了不少西方的文化。包括大炮,也包括烤鹅。在元大都就有了烤鸭店。为什么从烤鹅变成烤鸭?原因和鹅变成火鸡的一样。鸭子是中国的特产。烤鸭所用的鸭子更是由中国培育而成的良种。它的学名就叫做北京鸭。如今全世界都在吃这种鸭子。我说的是:野鸭子全世界都有,但是只有中国人驯化了它们。中国自两千年前就开始驯化野鸭子。也就是英文叫「mallard」的野鸭子。这个名字如今是一种衣服的牌子。欧洲并没有驯化鸭子。却在很早就驯化了鹅。他们驯化了鹅也就够了。因为鹅比鸭子大,至于鸭子,地中海和欧洲地区的人一直只拿它当猎物。在圣经里面就有对鹅的记录。罗马的传说中有一队鹅救了罗马的故事。而鹅在中国不如鸭子普遍。现在你到每个水塘里面都有鸭子,很少看见鹅。所以烤鹅在中国就就变成了烤鸭。在元朝的时代的烤鸭,作法和西方的烤鹅几乎完全一样。在中国叫「焖炉烤鸭」。好像现在已经吃不到这种烤鸭了。

这种烤法也是西方特色:用一个石头或砖头砌的炉子。

在里面生火。先把炉子本身烤热,使炉壁吸收大量热量。然后再放进鸭子。靠炉壁散发的热量,把鸭子烤熟。这也是欧洲人烤面包的方法。这样可使食物受热的温度不高而均匀、长久。发明这种方法的,一定是对烤制食品特别有经验的人。也就是天天吃烤面包的西方人。由于天天烤面包,烤了几千年,发明了把大面包烤熟烤透,而又不把面包皮烤糊烤硬,并使其有烟味的办法,这就是用炉壁吸收的热来烤,而不用火源本身烤。因为这种烤鸭是是把鸭子关在里面烤,所以叫焖炉烤鸭。在清朝末年,烤鸭的方法改变了。

从焖炉改为挂炉。而且吃法也带有明显的山东的特色。

实际上烤鸭店就是山东荣城人开办的。其特点是用饼、大葱或黄瓜、酱和鸭子一起吃。饼卷大葱黄瓜和酱,是山东最常吃的东西。但为什么山东人发明了挂炉烤鸭,笔者有个假设性解释:

清朝末年,德国占领了山东的青岛,同时向青岛大量移民。当时的德国皇帝威廉二世说(似乎有手谕):「青岛属于德国并永远留在德国」。所以那时青岛的地位,不同于殖民地,而是德国本土在中国的一个飞地。这当然是威廉先生的想法。占领山东的普鲁士军人同时也是猎人。而野鸭子是他们传统的猎物。他们和他们的祖先,在德国或现在的波兰和捷克一带打野鸭子已经有上千年的历史,所以到了中国他们继续打。而且中国的野鸭子不少。至少在当时是不少。他们的习惯是在野外打了就吃。这种吃法类似如今的BARBIQUE,是用明火烤。这种野外的烤法,就和北京烤鸭的作法很像了。就是在鸭子身体上抹蜂蜜,然后一烤。中国人也马上学会了这种作法,但是并没有因此而完全地废除闷炉烤鸭。而是把闷和明火烤结合起来。使烤鸭既有明火烤的香味,又有闷炉的火候。

在这中间,中国人有了一项特别伟大的发明。就是不给鸭子开膛。只在鸭子身上开个小洞,把内脏拿出来,然后往鸭肚子里面灌开水,然后再把小洞系上。然后挂在火上烤。

这方法的好处有若干个,第一是不让鸭子因被烤而失水。第二是让水把鸭肚子胀着,这样鸭子的皮就被胀开,而不会被烤软,这样鸭子皮就很薄很脆。鸭子皮就成了烤鸭的最好吃的部分。在中国人发明这种烤法的时候,正是西方人普遍使用蒸汽机的时候。中国人把鸭子当做锅炉。似乎和西方人有异曲同工之妙。但是如果把这种作法,和烤鸭的吃法结合起来考虑,也得到另外一个故事。烤鸭的吃法很特殊,就是把皮卷饼就大葱或黄瓜吃。把骨头熬汤喝。我们也知道,西方的烤鹅有一个大问题,就是皮被烤得很硬,实际上人们经常是不吃皮。至于骨头就更没法吃。在山东的德国人也经常在节日里面吃烤鹅。和现代西方人一样,肉被吃掉而皮和骨头被扔掉。而这些皮和骨头就成了中国苦力的食物。山东人就按自己的习惯把皮卷了饼,把骨头熬了汤。而且发觉这么个吃法,有其特殊好味道。人就粉开动自己的特有的智慧,把这种吃烤鹅皮和骨头的办法,改变成吃烤鸭子的办法。我们知道,这种下层人士发明的烹调术,在中国的烹调术中占据着特别重要的位置。比如「叫花鸡」,据说砂锅居也是用肥肉下水等富人的废弃物起家的。涮羊肉、泡馍、卤煮火烧等烹调法也都来自下层。

在清朝的时候,烤鸭的鸭子也从一般鸭子变成填鸭。填鸭的方法来自欧洲。这方法本来是用来填鹅的。因为欧洲人很喜欢吃鹅肝或鹅肝酱。为了使鹅长出一个大肝来,欧洲人就想出了填的方法。在英语中叫「force fed"。目的是让鹅长出一个大脂肪肝。说到这里,似乎有点倒胃口了。结果中国人学会了这方法。对鸭子实行。就成了北京填鸭。

后来北京鸭(不是填鸭)传到了英国,英国把北京鸭改良了,使北京鸭不填也可以长到十几斤。而且由于改良了饲料,鸭的瘦肉含量提高。在欧洲的中国饭馆发现用这种鸭子作的烤鸭,更适合欧洲人的的口味。因为他们都怕吃进过量的脂肪。后来中国也引进了这种鸭子。如今有人把它叫做英国鸭子。实际上是北京鸭的改良种。现在烤鸭店卖的基本上都是这种鸭子。笔者以为真正好吃的鸭子是南方的湖鸭。湖鸭体小,但是味道比填鸭好得多。

南方用湖鸭作的菜,如果换上用填鸭作,味道就差远了。但是湖鸭太小,不能烤着吃。因为烤鸭不能开膛,而且主要是吃皮。湖鸭不适合这种作法。四川有「油烫鸭子」。是用湖鸭作的。味道也不差。至于野鸭子,笔者从来没吃过,可能在中国也已经不存在了。

现在我们讨论「烤」这种烹调方法。

全聚德是山东菜馆。它的所有的菜,只有烤鸭一道是烤制的。烤并不是中国东部的烹调方式。中国喜欢用的是蒸。

炒和煮。其中蒸和炒为中国特有的方法。中国的馒头包子都是蒸的。据考证武大郎卖的「炊饼」也是蒸饼而非烙饼。有人说就是馒头。而西方的面包蛋糕都是烤的。因为面包是西方人的主食,天天都要吃,所以他们每天都和烤这种烹调方法联系在一起。中国对烤实在没兴趣,蛋糕在中国,也变成蒸的,和发糕的作法一样。足见我们对蒸的执着和爱好。我们对鸭子的吃法,也主要是蒸。比如板鸭腊鸭,盐水鸭,都是蒸着吃。广东地区特别喜欢吃炖盅。特别是禽类的炖盅,认为能大补。所谓炖盅实际上还是蒸。

除了烤鸭,中国东部的菜式几乎没有烤制的。而且几乎所有的中国饭馆,除了卖烤鸭的之外,都没有烤炉。我们常吃的烤羊肉串是中国西部的烹调方法。这种方法有是从更西面的地方传过来的。西部的烤制方法,一定要加上西部特有的香料,比如兹然。而烤鸭并不放这些东西。

至于中国人为什么这么喜欢蒸,笔者有一个假设性的解释。这或许和中国人很早就发明煮盐有关。中国古代文明的中心,一直远离海洋。吃盐就成了一个大问题。据专家考证黄帝和蚩尤的战争,就是为抢夺山西运城附近的盐池。具物候学家(竺可桢)调查。当时中国水多,所以既使是盐池也应该是盐水池,而没有巖盐。为了把盐水变成盐,可用晒盐和煮盐两法。而晒盐需要大而平坦的滩地。中国内地这种地方不多,如果有也被开垦成田地。

古希腊人也有这个问题。希腊人就住在海边上,而且地中海的盐份还比平常的海更高。但是希腊地区的海岸多山,海滩很少。他们也没有足够的滩地晒盐,所以他们用自己的产品,比如葡萄酒和橄榄油,到黑海地区的去换盐。那里有大片平坦滩地,可用作晒海盐的盐池。所以内地的中国人只能用煮的办法获得盐。特别是可用于商业运输的盐。在古代中国书籍上有煮盐的图,没晒盐的图。而煮的时候有大量水蒸汽。这些蒸汽可用来作饭。也可用来蒸肉类。还可以把肉和饭一起蒸。比如现在的粉蒸肉。大家知道,蒸是一种比较浪费火力的办法。烤和煮都能使食物更直接地接受热量。所以中国人喜欢蒸一定有特殊的道理。这道理就是可利用煮盐的蒸汽。
