　　该制品有近百年历史,是苏州稻香村的名特产品.
　　原料配方：玉兰片(坯)26.2千克糖渍板油丁5.5千克白砂糖4.8千克饴糖18千克(烧糖浆用)绵白糖8千克熟油8.75千克(油炸用)干玫瑰花适量(罩面糖用)
　　制作方法：
　　1.玉兰片制作：潮米粉中加入适量的绵白糖和水,调制成松散状的韧性米粉面团,使米淀进一步充分胀润.将米粉面团置在蒸笼内蒸熟,经搓摺成扁条状.然后将冷却后扁条状的生坯切成薄片.再将薄片摊在大竹篾里或其它容易透气的容器里,置在风口上晾干,成半透明、玉兰花瓣状.
　　2.油炸：油温升到160℃左右,将玉兰片坯投入油锅,待冒上油面,立即用笊捞起,摊开冷却,即成玉兰片,色微黄.
　　3.烧糖浆：将白砂糖加入适量的水加温溶解后,再加入饴糖继续熬煮到130℃左右.要根据气温灵活掌握温度.
　　4.上浆、压制成型：将炸好的玉兰片放入锅内,浇上热糖浆,播拌均匀,再把糖渍板油丁放入,待全部翻拌均匀后,起锅倒入涂过植物油的框格内铺平、填实,再用工具掀平,表面撒上一层绵白糖和切细的干玫瑰花.切成长10厘米、宽6厘米的长方块形.
　　5.冷却、包装：冷却凝固,用彩印专用纸包装.
　　质量标准：
　　形态：块形完整,面、底平整.
　　色泽：浅黄色,表面有白糖和玫瑰花.
　　组织：炸透无僵块,糖渍板油丁分布均匀,无杂质.
　　口味：松香爽口,肥甜纯正,无异味.
